Does anybody really want to do 100% appassimento in Ontario? It has become such a fad it’s hard to pick out good ones from the gimmicky ones – Shauna White, winemaker, was hesitant to do one – so she put the remainders of Cabernet Franc, Petit Verdot and Merlot dried wines – together into a barrel for 24 months (and a 1 year old barrel at that) – she was pleasantly surprised by the silky nature of the resulting wine with its rich cherry, licorice and spice, but mostly by that rocking acidity … they made 34 cases of 500ml bottle – each bottled and labeled by hand.
