This new Prince Edward County winery has come right out of the gate with a beauty Chardonnay, and the surprise is there’s no oak used, it’s all stainless steel aged with a year on lees (dead yeast cells) which has given the wine a lovely vanilla-cream-butteriness with the subtlety of apple fruit … it’s a really good first effort, giving hope for more in the future from this winery.
