Aside from those houses that focus solely on icewine, Pillitteri devotes the most of its time to the production of icewine (over 50% of their production), that’s more than any other winery. So you knew it was only a matter of time before you saw icewine with bubbles. The nice part about this one is that it has some age on it so it lacks the sickeningly sweet aspect that could have been associated with sparkling icewine – instead you get notes of honeyed dried fruit like peach and pineapple – while the wine dances and bubbles across the tongue.
